Elias Mora was just recently rated as one of the 'Top 4 in Toro' by Antonio Galloni's Vinous Magazine. This prestigious honour is not a surprise to us, Elias Mora's Roble and Crianza have graced our palates and we love the sophistication and elegance they coax out of the bold Tinta de Toro grape. Our Wine Director travelled to Spain last fall, visited Elias Mora, and fell for their Descarte. Never before in Canada, this wine is exclusive to WIneCollective. Only 168 bottles made the voyage to Canada from Toro, Spain. The wine was named Descarte after the discarded cards from a poker hand; however not intended to be a negative analogy. The small parcels are hand picked for their unique qualities, that don't fit the style of the traditional wines. Enjoy by 2020 and decant for a minimum of 30-60 minutes. Chill slightly to 16 degrees Celsius and allow to warm in your glass.

A woman winemaker and operated by women, Elias Mora wines are finessed and elegant, but the Descarte offers an additional 'oomph' in texture and flavour. Local plantings of Tempranillo, Tinta de Toro, are rich and hearty with often high alcohol. Grippy tannin, moderate acidity and flavours of smoke, bitter cherry and ripe raspberry linger through the finish.
As suggested by the winery, wild game and poultry will emphasize the meaty-ness of the wine.
