Schild Estate's approach to making Chardonnay starts with site selection and vineyard location. It focuses utilizing altitude and cooler locations of the Barossa Valley to provide acid backbone and tautness along with lower lying valley floor sites to bring fresh, intense fruit flavours to the mix. This delicate balancing act is then supported in this particular style, through techniques such as lees stirring to provide texture and body. The Unwooded Chardonnay was among the consumer favourites at the Schild Estate wine club launch in October 2016! Cool December and January night time temperatures saw favourable white wine ripening conditions prevail towards the end of the growing season in the region. The result was a measured pace of ripening which ensured the balanced development of sugar and flavours in the fruit along with the retention of natural grape acid. Enjoy anytime before 2021 at 12C.
Fragrant delicate floral notes, white peach, nectarines and stone fruit.
Fresh and juicy with a hint of creamy volume derived from lees stirring and some tell tale varietal nuttiness. Familiar notes of white peach, tropical fruit and lemon citrus to finish are couples with a fresh acid line and a clear direction of travel and some real balance.
Butternut squash ravioli or risotto.
