The Vantage Winery is one of the largest wineries in California. The property is a destination point for many, with beautiful rose gardens, cypress trees and Mediterranean architecture. Although modelled after the Benedictine Monastery in Monte Cassino, Italy, the winery utilizes some of the most advanced winemaking technology. Paso Robles is an expansive wine region in California, covering over 270,000 hectares and divided into several sub-regions. The hot climate produces ripe and concentrated Syrah, Zinfandel, Grenache and Cabernet, which require extensive warm temperatures to ripen fully. Just coming into its full maturity, there is still plenty of life left in this wine. We did find that this wine did not perform as well on day two, We felt that it softened too much and lost much of it's flavour and body. There is no immediate rush to enjoy this wine, but we think it is drinking very well now. Enjoy this year at 18C.
Medium cherry-hued core and a light rim, but not yet turning to a brick colour, which would indicate age.
Sun-baked raspberry, blackberry and cherry. Red apple, a touch of cedar chest and vanilla bean add deeper layers that are interesting and complex. There is a hint of spice, but it only shows with added warmth and a few swirls.
The tannins are still lightly sticky, but have become softer with time in the bottle. Medium acidity, that is slow to build, but envelopes with a quenching quality. Smooth, plush body with a bit of rugged oak and briar patch flavours. Black raspberry, cherry and tart cranberry create a very fruit-dominate profile. The flavours are redder on the palate than the nose. There is a tiny bit of heat in the moderate finish.
