Unfortunately this vintage is sold out but you can find the freshest vintage here! Tandem Winery is a 100% gravity flow facility in the Yerri Valley, within the Navarra region of Spain. After hand harvesting the grapes, the winemakers rarely touch the wine again. Grapes enter the winery and every step along the way to bottling is done with the help of gravity. Even fermentation is done without the use of pumps, instead, a gentle cap press is used. Check out our blog for more info on gravity flow winemaking! Tandem's Ars In Vitro is a blend of 90% Tempranillo and 10% Merlot. While this wine doesn't undergo oak treatment, it does see 24 months aging in concrete vats. Concrete vats have a naturally occurring ability to adjust temperature, so the wine never gets too hot or too cold. This allows for a smooth and gradual fermentation resulting in a round mouthfeel while maintaining the bright freshness of the wine. You are one of the first to try this wine in Canada! This wine can be cellared for a few years, but is ready to be enjoyed now. Serve at 17C.


How it looks

Deep cherry red, with a purple undertone. The colour is quite vibrant and lively.

How it smells

Intense red fruit aromas; raspberries, cherries and strawberries. There are lovely floral notes of violet that compliment the berry bush and blossom aromas. Little hints of leather and wet earth are present, giving light rustic appeal.

How it tastes

This wine presents layers of flavours and complexity. Red fruits mimic the nose with cherries, strawberries and raspberries. There is some dark fruit present as well, plummy notes with a dash of blackberry and black currant. The tannins are fine and complimented by the acidity; both are gentle and welcoming. This wine leans to the full side on flavour, but medium on weight and body. Easy to drink on it's own or with a meal.

Recommended food pairing

Oven-braised beef ribs with creamy, whipped potatoes and roasted vegetables. Or a savoury duck ragù on a bed of fresh pappardelle noodles. The wine is vegan, but that doesn't mean your meal has to be!
