It never fails, just when we think we know a thing or two about wine, we learn something new! When we found the Natale Verga Governo Rosso, we had no idea that Governo referred to a winemaking technique. This technique was once widely used in Chianti, but is rarely used now. The technique consists of harvesting grapes as usual, then setting them aside to dry out. The dried grapes are pressed in late fall and then added to young wines which have already concluded their fermentation. Combining these two juices results in a second round of fermentation, which encourages malolactic fermentation. The wine produced has a softened, rounded mouthfeel, especially noticeable with Sangiovese, which can be quite robust and acidic. Casa Vinicola Natale Verga was founded in Tuscany by Enrico Verga in 1895, and has been passed down for four generations. This blend of Sangiovese, Cabernet Sauvignon and Merlot is ready to drink now but can cellar for up to 5 years. Serve at 16C.

We found the nose a little restrained at the beginning, but once it opened up there was an abundance of aromas! Red plums, raspberries, blackberries and tart cherries. A dusty concrete note adds to the minerality. Violets and a hint of spice are also present.
Super Tuscan wines always have a degree of complexity to them. This wine manages to balance the rustic and robust nature of Italian wines with the friendly welcoming flavours of the new world. Initially we taste tart cherries, raspberries and some red currants. There is a tea influence here, reflective of the herbal and leafy flavours. The tannins are present but gentle. This wine is young, so decanting always helps to coax out the flavours.
A rich Tuscan bean stew with sausage is perfect for winter nights. Traditional roast beef Sunday dinner with all the fixing is also a perfect pairing. Don't forget the popovers!
