Smell
Citrus aromas give pop and energy with lime and white grapefruit, while deeper notes of stone fruits provide the base. From the lees and ageing, we find secondary flavours of dry toast, blanched almonds and a bit of candle wax.
Taste
Awesome scoring from Natalie Maclean, "Bright and zesty with lime-alive aromas and toasty bread. Great value and quality for the price of this Ontario sparkling wine. Finishes with a lick lemon zest. This Niagara bubbly is made from Riesling from the winery's Limestone Ridge Estate Vineyard. This is a great gift wine or pair it with shellfish."

The winery suggests, "This sparkling wine can be served as an aperitif paired with oysters or tempura battered shrimp or enjoyed with a dinner of lobster mac n’ cheese or fried chicken. Of course a wine as flavourful and enjoyable as this one is also perfect all on its own, just add friends."

The Limestone Ridge Sparkling Riesling from Tawse has made its rounds amongst the critics, from Wine Align, Natalie Maclean, and numerous publications, this wine has received a tone of positive attention. Featured in the Edmonton Journal's 'Wine Pick', "This sparkling wine is bright and refreshing with aromas and flavours of lemon and lime zest, green apple, and grapefruit. It has a lively texture, touch of minerality and racy acidity on the finish. It’s a great match with oysters, sushi, fried foods and anything with a touch of spice. It was the winner of the Best Bubbles Award at the Northern Lands Festival Wine Competition last weekend."
