Smell

Fresh and vibrant aromas that offer bright and spicy fruits. Think spiked jellies, or cherry compote made with sweet, pink peppercorns. There are earthy notes that give a musky aroma, we think of old wooden chest or sandalwood. There are also expectant and decadent baking spices.

Taste

The myriad of aromas translates to the palate, and we find similar notes of fruit and spices. A great Pinot Noir over the cooler months, the flavours remind us of holidays spent in a cabin in the woods! Cranberry, plums, fruit cake, grilled raspberries and preserved jellies. It is a medium weight and full and plump on the tongue. The finish lingers well after the sip, and leaves us with briar patch, plum skin, and pomegranate seeds.

Pairing

Pinot Noir is a perfect match for grilled salmon, roast duck and other richly flavoured and fatty proteins. We like meat pies and meatloaf, something easy after a month of cooking and entertaining.
