Château Guillot is located 20 km from the prestigious Saint-Emillion region of Bordeaux (known for Merlot based blends), and near the Dordogne River which is impactful on the vines that surround it. The estate of Château Gantonnet has existed since the 19th century and has been under the current ownership of the Richard family since 1962. The Guillot wines are produced within the Gantonnet family.
The Bordeaux Supérior Rouge is a tradiontal 'Bordeaux blend' that is predominately made of Merlot, with lesser amounts of Cabernet Franc and Cabernet Sauvignon. The wine is aged in oak for 6-8 months which helps to soften the tannins and impart small amounts of neutral oak flavours to the wine. Prior to bottling, the wine spends 6 more months in large vats with the less, or 'sur lee', which means the wine is in contact with the yeast particles and particulate matter from the grapes, which again adds more texture and flavour to the wine. Racking, filtering and fining are all processes of removing the lees and clarifying the wine before bottling.
Completely ready to enjoy today, but we do highly suggest about an hour decanted before enjoying a full glass. If you have the patience (or want to stock up on an extra bottle), we also suggest saving this wine for another year, or potentially until 2022 under proper conditions. It shows a bit young and would benefit with some extra time resting. Serve at 18 C.
Rich red, with a dark core and consistent colour intensity towards the outer rim that is bright magenta.
There are lots of secondary aromas upfront, with the fruit profile taking back seat at first. First sniff reminds of a freshly shingled roof on a hot day - the combination of tar and asphalt, hints of matchstick too. With decanting or some solid swirling, the nose opens up to menthol, bay leaf, cracked pepper and confectioner's sugar, right before a waft of crushed blackberries and purple plums.
This is a solid wine, but it is a bit austere - so drinker beware! Kind of like a good looking blind date whose first impression might be a bit coy, which requires you to be patient if you want to get to know them better. The texture is a bit rugged with grippy tannins and just enough cleansing acidity. The firmness on the palate gives us a traditional style with a base that is dry, and focuses on the backbone of Cab Franc. Again, the fruit isn't leaping out of the glass, but we find a mixture of fresh picked raspberry, blueberry and a noted herbal quality that is mellowed by bark, oak chest and bramble bush.
There are lots of factors to consider when making the perfect pairing decision, like dominant grape varietals and the age of the wine. Young Bordeaux style blends are going to be more tannic and bold flavoured, which allows them to pair with more aggressive flavours. Here you can opt for rich sauces, stronger seasoning and searing or BBQ'ing.
