Profile

Pinot Noir is grown throughout California, but it really shines in the cooler coastal regions, with its historic homebase in Sonoma County. California Pinot Noir is renowned for being supple, while providing ample fruit freshness. You can often find secondary notes of forest floor and mushroom alongside berries and plum in your Cali Pinot.

Pinot Noir can be found around the world and goes by several different names! Pinot Noir originates from France — and more specifically — the region of Burgundy. Here, a bottle of Red Burgundy is actually Pinot Noir — they refer to the wine by where the grape is grown, rather than the varietal. Over 70,000 acres of Pinot Noir is grown in France — more than anywhere else. In Germany, Pinot Noir is referred to as Spätburgunder and Pinot Nero in Italy. Pinot Noir has a lot of history and is recorded to be older than Cabernet Sauvignon. Over the years, new variations of the grape have been identified. For example, did you know that the white varietals of Pinot Gris (Grigio) and Pinot Blanc are actually mutations of Pinot Noir and share the same DNA?!

Ray's Creek is offered to WineCollective members exclusively in Canada. This is a no-brainer Pinot Noir that showcases elegance with bold personality and is perfect for sharing with company over the holidays. Chill slightly to 18 C and serve by 2020.

Look

The colour of a Red Delicious apple with a medium-light core and paler edges. There is a faint bricking around the rim and shows a burnt hue when swirled.

Smell

Summer berries take over the nose, from ripe and juicy raspberry jam, to tart and freshly picked cherry and strawberry. Strong undertones of herbs add a wild and savoury aroma that offers up fall tendencies and calls for slow cooked meals. Balancing out the crunchy berries and herbs is a light offering of spice, chocolate, and oak.

Taste

Continuity from the aromas to the palate make the transition from sniff to sip seamless — indicating that this is a well balanced wine. Cranberries come to centre stage and are accented by strawberries and raspberries. Along with the plump and tart fruit, we can taste the raspberry leaf and briar patch, which add earthy and vegetal components. The tannins are moderate and add a light drying texture to the medium-light body. The acidity is pleasantly bolder than expected, giving a freshness to the rustic flavours. The finish leaves us with more herbs, and a touch of bitterness in cherry cough drop and menthol.

Pairing

Pinot and mushroom are a great match. Try your hand at a mushroom and lentil loaf made with walnuts and herbs, served with a savoury gravy. A great veggie option that is hearty and rustic!
