Named after the village southwest of Florence, Fattoria San Michele a Torri is dedicated to respecting the traditions of agriculture and viticulture. Paolo Nocentini, estate owner, has overseen the renovation and expansion of the farm to include organic certification (since 1992) as well as the cultivation and production of typical Tuscan products like olive oil, honey and chickpeas. The estate owns 370 hectares of land, with 55 h of vineyard, solely for production of wine.

The Chianti Colli Fiorentini from Fattoria San Michele a Torri, the estate's flagship wine, is a blend of Sangiovese, Canaiolo, Colorino and Merlot. A portion of the wine (30%) undergoes barrel aging which softens the texture while providing depth of flavour. The balance of the wine is aged in cement tanks, which keeps the youthful side of this Chianti bright and fresh. This wine is a double agent - perfect for a weekday treat or to share at your next dinner party. Drink now or hold for up to 5 years. Serve at 16C.

Look

Lovely ruby red with purple reflections and a pale rim, showing it's youth.

Smell

The Canaiolo provides a floral and perfume nose which is balanced by Sangiovese's intense and persistent savoury herbs and tart cherry aromas. Hints of dark fruit and red plum are present but not overwhelming. We are transported to the rolling hills of Chianti with this nose!

Taste

This is a classic example of a Chianti - ripe, tart cherry, savoury herbs and medium acidity are the front runners. The tannins are present but not aggressive. The structure is complimented by red and black plums, fresh rosemary and sage, with a touch of minerality. With freshness of the palate, you could give this a slight chill for a hot summer night. Don't be afraid to tuck this away, a little age will help give more depth and cohesiveness in the flavours.

Pairing

Whip up a plate of carbonara (don't forget the fresh peas!) or garden tomato bolognese sauce for something with a little more oomph.
