Blue Pyrenees is a winery new to Canada and exclusive to WineCollective members. We have featured several wines from Blue Pyrenees, but the Sparkling Rosè is only found in this special release package for Valentine's Day. We firmly believe you do not need a special occasion to enjoy great bubbles, but we will welcome any excuse to pop this cork! This sparkling is a perfect celebratory bottle, brunch companion, or 'just because' wine.
The Pyrenees region of Australia, located in central Victoria, covers just under 500 hectares of vineyards. The area is diverse and showcases many microclimates due to the varied elevations and weather patterns in the rugged foothills. The majority of the region is hot, arid, and produces Cabernet Sauvignon, Shiraz, and Sauvignon Blanc. Cooler varietals, like Pinot Noir and Chardonnay, are found in the far south of the region, where the temperature is more moderate. This “methode traditionnelle” sparkling wine (same process as making Champagne) is produced with Chardonnay and Pinot Noir of several vintages, so "the aged reserve wine influence is strong, resulting in a mature pink wine". Receiving 90 points from James Halliday, this wine is sure to impress! Enjoy this year and serve at 8 C.
There are bubbles for days - long lasting and persistent. The colour has a rosy-peach tinge that is a beautiful shade in your flute.
Aromas are delicate and restrained at first, but we find romantic notes of confection and fruit. Green strawberries are bright and vibrant - still on the vine and wild. Apple skin notes are tart and fresh, reminiscent of summer time. As the wine warms in our glass, sweeter notes of peaches and cream, candied grapefruit, and flaky pastry add a lush layer.
Consistent with the nose, the flavour profile is filled with underripe strawberries, apples, and the freshness of summer fruits. Our tongue pops from the clean and zippy acidity that is palate cleansing and prominent. The bubbles are vivacious and prickly on the tongue. The wild orchard fruits can be found under the bubbles, along with pastry and brioche, lasting well into the finish.
