Don't be misled by the word Cabernet on the front label of this gem from north-eastern Italy - this is 100%, unabashedly Cabernet Franc! Savian is the project of a third-generation winemaker whose grandfather was granted a small 4 hectare parcel in the 1920s. Located in the little-known DOC of Lison-Pramaggiore, at the border of Veneto and Friuli-Venezia Giulia, the Savian family produce wines that emphasize the characteristic freshness and elegance of the region. Farming is organic and focuses predominantly on Cabernet Franc, which is the star red variety of the region. Enjoy now with a slight chill!
In the glass, this is a medium, opaque ruby fading to a bright red rim with a hint of orange.
Loads of bright red fruit right out of the gate, with cherry, raspberry, and plum leading the charge. There are some nice floral notes underneath, with a hint of earthiness and a slight crunchy under-ripeness characteristic of Cabernet Franc grown in cool climates.
This is a perfect "do-it-all" style of wine: light enough in body and tannin to enjoy on its own, but with enough savoury notes adding complexity to the outgoing fruit to pair well with a wide variety of dishes. The palate echoes the fruit-forward character of the nose, and finishes long and soft with a fresh, lifted acidity characteristic of the Cabernet Franc grape.
Versatility is the name of the game for this wine. Think of it as the character of a Pinot with the backbone and attitude of a Cab. Grilled pork tenderloin, braised lamb, and soft-rind cheeses would all work great, but it's light enough on its feet to play well with just about anything.
