Sancerre, at the eastern end of France's Loire valley, is home to some of the best-known and highly-regarded Sauvignon Blanc in the world. While New Zealand is often the country that comes to mind when thinking about the grape, France is its original home, and the limestone soils of the Loire valley give the wines a distinct minerality that separates them from their new-world cousins. Rather than the showy grapefruit aromas that often characterize Sauvignon Blanc from New Zealand, wines from Sancerre tend more towards restrained, elegant orchard fruit flavours.

Folium's "La Haubette" is sourced from organically and biodynamically farmed vines that are upwards of 20 years old. Fermentation takes place in temperature-controlled stainless steel tanks with native yeasts, and the wine is left on lees for four months to add texture and depth. The finished wine is a perfect introduction to Sancerre - bright, fresh, and full of character! Enjoy at 10 C over the next 3-5 years.

Brilliant pale lemon yellow with a clear rim.

Smell

A burst of fruit practically leaps out of the glass, with green apple, pear, gooseberry and lime. With air, herbaceous note of lime leaf and grass begin to emerge, with mineral notes of wet slate and a flinty, gunpowder-like smoke lingering in the background.

Taste

Light and fresh on the palate, with plenty of Sauvignon Blanc's trademark acidity, but balanced by a richness of texture that adds depth without being heavy. The finish is long and pure, with more Granny Smith apple, lime, and gooseberry flavours.

Pairing

Classic matches for Sancerre are freshly shucked oysters with a mignonette sauce or creamy goat cheese, both of which are heightened by the tangy acidity of Sauvignon Blanc. It's also one of the only styles of wine that pairs well with herbaceous vegetables, so try it with a creamy risotto with asparagus and english peas.
