WineCollective members might recognize the name Los Clop, as we featured their 2015 Malbec this past February. Known for combining age-old traditional winemaking with cutting-edge technology, Los Clop is a great example of world-class wine coming from Argentina. This Cabernet Sauvignon grows in their Paraje Altamira vineyard, located in the Uco Valley. Not far from the Chilean border and on about the same latitude as Santiago, the region is well-known for its high elevation vineyards. This means they are growing vines in places higher than the U.S. Appalachians and produce wine with a uniquely fresh character, acidity, and age-ability. Cabernet Sauvignon is one of the world's most popular red wine varietals, growing in majority of wine regions. Originating in the Bordeaux region of France, the grape has made its way throughout the new world wine countries as well. A beloved varietal, we are always thrilled to share a bottle of 'cab sav', especially when it's this good! Los Clop's Cabernet Sauvignon can be enjoyed now to 2024 and at 18 C. Decant for 30 minutes if desired.
Very expressive nose of bell pepper, cassis, and raspberry jam, combined with notes of vanilla, coffee, leather, tobacco, and spices. The more earthy notes are prominent but not overpowering. There is a nice balance between the red fruit and vanilla.
A very moody, dark, and thick wine. This is not your everyday table red! Sweet and round tannins create an overall pleasing mouthfeel with great structure. Balanced flavours from the nose can be found in taste: rich, dark, red fruits and earthiness from tobacco, spice, and oak. A bit of a smoky finish with hints of vanilla make this a great standby and worthy addition to any cellar or wine fridge.
We can't stop thinking about serving this with a steak salad. Nicely charred striploin with a rich, zesty dijon-based dressing. An extra cheesy homemade lasagna would also be great!
