This isn’t our first time featuring a wine from makers Samantha Bailey and Guillaume Letang. The duo is known for finding the very best grapes and creating fun, lively wines that are much beloved. This particular 100% Pinot Noir comes to us from the Haute Vallée de l’Aude, which has many great advantages for Pinot Noir to truly thrive. Warm sunshine from the Mediterranean with the altitude and cool nights from its location beneath the Pyrenees mountains creates ideal conditions. This climate and and geographic region allows for longer, slower ripening of the grapes which results in wines with great intensity and sophistication.
There are many reasons we look to feature wines under the Boutinot Wine label, and this Pinot Noir is a great example. The winemaking team have created an outstanding wine that is true to the grape and region, while being able to offer it at a great price. Is there a better combination than great taste and value? Beyond the striking light ruby red colour, this Pinot Noir is full of fragrant florals like violets and plenty of ripe, red fruits. Freshly picked raspberries, stewed cherries, and red plum are complemented nicely by a slight herbal, leafy tone.
Definitely more full-bodied than a Pinot Noir from Burgundy, Les Volets has medium+ acidity with fine, moderate tannins that are just what we would hope for a Pinot from this region. Red fruits are present in abundance, from raspberry to sour cherries, with just the right amount of spice on the finish.
Try this with a braised pork roulade for a classic match, or enjoy with a savoury tart with caramelized onions and mushrooms.
