If you love Bordeaux-inspired reds, Serafini & Vidotto's Phigaia will be right up your alley. It's a bold, full-bodied blend of Cabernet Sauvignon, Cabernet Franc, and Merlot. The winery is located in Montello-Colli Asolani DOC in Veneto, in north-eastern Italy. It was founded in 1986 by winemaking friends Francesco Serafini and Antonello Vidotto, but the grape-growing history of the land stretches back hundreds of years. In particular, the region has always been famed for their red wines, and one sip of Phigaia will show you why.
Careful farming is at the heart of everything that Serafini & Vidotto do, and yields are kept low to ensure high quality - the average output is only about one bottle per vine. After fermentation, the final blend is aged for anywhere from 12-18 months in oak. We'd recommend about an hour in a decanter if drinking soon, but Phigaia will cellar well for the next 5-7. Serve at about 18 C.
Brooding, dark fruit aromas are at the fore, with Cabernet Sauvignon's signature cassis, along with fresh black currants, black cherry, sour cherry, and plum. Sweet herbal aromatics mingle with black and white pepper, tobacco, and coffee, adding depth and complexity.
Full-bodied and soft on the palate, with round, ripe tannins, and good weight. Red and black fruit notes dominate, with more cherry, raspberry liqueur, and black currant. The finish is long and dry, with hints of pepper, baking spice, and liquorice. The balanced acidity adds elegance to the dense, ripe fruit, and will support several more years of evolution in the bottle. Decant in the short term to get the most out of this complex red.
Phigaia will shine with many different dishes, but try with grilled lamb chops seasoned with fresh rosemary or braised beef cheeks, or match with bolder aged cheeses.
