Cava, Spain's most famous sparkling wine, began life as an effort to emulate the success of France's Champagne. Adopting the technique of re-fermenting wine in bottles after a trip to France, Josep Raventós made the first Cavas in 1872. Rather than using Champagne's trio of Chardonnay, Pinot Noir, and Pinot Meunier, however, Cava producers turned to local high-acid whites like Macabeo, Xarel-lo, and Parellada. These three grapes remain the backbone of most Cavas, though in recent years many producers have begun including Chardonnay and other international grapes in their blends.
Cava producers can also be thanked for the popularization of the most important modern technology in sparkling wine production: the gyropalette. The ability to automate the process of riddling bottles, which is a critical step in making traditional-method sparkling wine, allowed Cava producers to bring their wines to market at significantly lower prices than Champagne. Cava remains one of the best bang-for-your-buck experiences in the sparkling wine category, and this Brut Nature (the driest category of Cava) from Naveran is no exception!
