Smell
The aromatic nose on this red is sweet and supple with a nice minerality, registering scents of red and black cherry, and freshly-cut plums, along with some more savoury notes of spice and coffee.
Taste
The palate on this beautiful red is dry, with round, bright flavours of cherry, plum, strawberry, boysenberry, raspberry, and blackcurrant. There are flavour notes of spice and undertones of dried leaves. This Merlot has pleasant, velvety tannins that are soft and luscious. This food-friendly wine begs to be served with a meal.
Pairing
This Merlot would be a great match for appetizers like pâté, or a meat and cheese platter, or mains such as pappardelle in a mushroom marinara sauce.

Description
François Gilbert and Philippe Gaillard, wine tasters and critics, decided to put their 25 years of experience and knowledge to work to create an exceptional wine estate in the Languedoc: Château Gilbert & Gaillard. It has been their mandate for 30 years to defend local wines on the international stage. Their desire is to let this fabulous terroir, worthy of the greatest vintages, express itself.
The estate of Château Gilbert & Gaillard is located about twenty kilometres from the sea, in the town of Puisserguier, where the sunny, warm days make for rich, full, velvety wines that are simply delicious and capable of ageing. The estate is also currently converting to be fully organic.
The Mediterranean climate in the area ensures enough sunshine, sufficient rainfall, and, above all, the common presence of the north winds that flow through the vines most of the time, which keeps the vines healthy. Serve this wine now at 18 C, or hold until 2025.
