Profile

Smell

Loaded with aromas of red currant, cassis, plum, and black raspberries, this is a Bordeaux lover's dream. There's plenty of earthiness here too as the wine opens up, with notes of sweet pipe tobacco, leather, dried leaves, and forest floor.

Taste

Structured and firm on the palate, with youthful, fine-grained tannins and rich texture. The fruit is expressive and bright, with a core of red and black fruit, consistent with the nose. The finish is long and pure, with echoes of smoke and damp earth.

Pairing

Classic wines call for classic pairings: match this robust red with boeuf bourguignon or a hearty vegetable-based stew, or pair with firm cheeses to start.

Aromas and Flavours

Black Currant

Sometimes also referred to as 'cassis', this black fruit tasting note is common in red wines.

Blackberry

A little sweet, a little tart, this black fruit is rather quiet but persistent.

Plum

Sweet, fruity and sensual, similar stone fruit aromas to a peach, but without the 'fuzziness.'

Tobacco

The smell of a freshly rolled cigar, slightly sweet, and earthy - just like Grandpa's hugs.

Cedar / Oak

An intriguing mix of clove, sandalwood and resin - the smell of your favourite wooded trail.

Description

Bordeaux lovers rejoice! We've found another gem exclusively for WineCollective members, this time from a historic estate in Lalande-de Pomerol, on Bordeaux's right bank. Château Vieux Cardinal Lafaurie dates back to the 12th century, and their flagship red is a blend of Merlot, Cabernet Franc, and Cabernet Sauvignon. The Cabernet Franc vines on the estate were initially planted so that the Knights of Saint John of Jerusalem, who build a hospice here to care for pilgrims, could make wine for mass. The vineyards today cover just 6 hectares, with about two-thirds planted to Merlot.

After harvest, the grapes undergo a maceration period of about 2-3 weeks, followed by fermentation, in temperature-controlled stainless steel tanks. The wine is then transferred to 100% French oak barrels, about half of which are renewed annually. The resulting wine is classically structured, with tannins that will easily support at least another 5-8 years of aging. Enjoy at 18 C, preferably after about an hour in a decanter.
