Assertive fruit flavours of blueberry and blackberry lead into more subtle aromatics of tea leaves, cracked black pepper, steak spice, and menthol. The savoury notes become more evident with air, resulting in a harmonious and complex nose framed by a hint of oak.
On the fuller side of medium bodied with fantastic fruit compote flavours. The tannins are ripe and grainy, and support the wine through the long finish. The acidity is reminiscent of tart raspberry, and mingles beautifully with blue and black fruit flavours. Dry spice and herbs linger on the finish, providing a perfect counterpoint to the fresh fruit.
Paloma de Plata will pair well with spicy grilled sausages or a hearty black bean soup, either of which will echo the savoury, earthy elements of the wine.

Monastrell, known as Mourvèdre in France, is one of Spain's most important native grapes. While winemakers in the south of France mainly use it as a blending grape, often as third fiddle to Syrah and Grenache; in Yecla, where it's believe to originate, the grape is the star of the show. Easily at home in the hot, sunny summers of south-eastern Spain, Monastrell achieves a density and ripeness that's hard to find anywhere else.
If you've never had a wine made exclusively from Monastrell, you're in for a treat! This organically-farmed example from Paloma de Plata is aged in barrel to soften the grape's often exuberant character. It strikes a fantastic balance between ripe fruit and Monastrell's distinctive savoury notes, and will cellar well for at least another 5 years. We'd recommend decanting if enjoying immediately, and serving at about 18 C.
