Smell
Rich, deep aromatics of warm raspberry jam, ripe red currant, and cherry intermingle on the intensely-perfumed nose. There's notes of violet and cocoa powder, along with warm baking spice and hints of smoke.
Taste
Like the Amarone from which it draws inspiration, Encanto is intense and full-bodied. The ripe fruit flavours might trick your palate into thinking it's sweet, but it finishes dry and robust, with developed tannins and surprisingly balanced acidity. Flavours of dried fig and chocolate mingle with tart raspberry and red currant in this complex, elegant red.
Pairing
Match Encanto with full-flavoured cheese, or pair with the rich, intense flavours of lamb shank slow-braised in red wine and herbs.

Description
Encanto comes to us from Argentina's Bodega Bourras, the collaborative partnership between Canadians Katrina O'Reilly-Ryan and Gordon Ryan, and Argentinian winemaker Jose Gomez. We've been longtime admirers of their wines since they launched in the Canadian market, so the opportunity to get the first crack at this unique new release was too good to pass up! Since the winery's inception in 2010, they've built their reputation on top-quality Bonarda, but Encanto has a twist: rather than being made with juice from freshly-picked grapes, a portion of the harvest is left to dry on the vine for another four months. Inspired by Amarone, this practice dries the late-harvest grapes, which helps concentrate the juice and adds intensity and complexity to the finished wine. The richness of this portion of the blend is balanced by the remainder, which adds freshness and ripe fruit.
Serve at about 18 C, and enjoy over the next 6-8 years.
