Classic Bordeaux on the nose, with the ideal balance between fruit and spice. There's plenty of blackcurrant, ripe plum, and black cherry, alongside fresh-ground black pepper, graphite, and sweet pipe tobacco. It's still very youthful on the nose, and will develop even greater complexity with time.
Dense and concentrated on the palate, this Haut-Médoc is full-bodied and structured. High tannins suggest this is built for the long haul, but there's a beautiful core of black cherry, plum, and liquorice, along with a fresh, balanced acidity. The long, dry finish has plenty of peppery spice and a hint of warming vanilla. Stock up now, and your patience will be rewarded with a few more years of time in the cellar!
This calls for protein, so pair with the robust flavours of a rib roast, or highlight the earthy elements of this wine by matching with a hearty vegetable stew.

Château Lestage Simon is a modern classic of the Haut-Médoc. Sourced from 30-year-old vines grown in both gravel- and clay-heavy plots on the estate, and made from the traditional blend of Cabernet Sauvignon and Merlot, the final wine is aged for about 12 months in French oak. Superstar consulting winemaker Michel Rolland has left his mark on this complex, elegant Bordeaux that is made to cellar and will age beautifully for another decade. In the short term, we'd recommend decanting for at least an hour before serving at about 18 C.
