Smell

Light and pleasant on the nose with lovely herbal and floral aromatics of freshly bloomed violets, savoury sage and a lingering anise note. The nose is subtle but lets your imagination run wild with ideas of what the first sip will bring.

Taste

Medium-bodied and bursting with bright berry flavours of huckleberry, blueberry, raspberry and blackberry jam. Although the berries are prevalent, there is a beautiful roundness and savoury earthy quality to the wine with hints of toffee, cedar and baking spices on the finish. Perfect on its own or for pairing with your favourite summertime BBQ dishes.

Pairing

Pair with Pasta Carbonara, eggplant provençale, veal chops with mushrooms or raclette (melted cheese with potatoes and pickles).

Aromas and Flavours

Plum

Sweet, fruity and sensual, similar stone fruit aromas to a peach, but without the 'fuzziness.'

Cherry

Fresh B.C. cherries out of the back of a truck, all eaten before you can get them home!

Raspberry

Tangy or sweet, juicy or tart: more sophisticated than a strawberry, but just as lush.

Description

Domaine Parazols Bertrou is an 8th-generation family-owned winery with vineyards throughout the Languedoc. In 2003, the family made a bet among themselves that they’d become known for making quality wines. Their goal was to make the wine collector’s items in wine lovers’ cellars worldwide. The beginning of that dream started in 2007 when they joined multiple export markets, expanding their reach. The family is also committed to promoting biodiversity, with over 100 different species of plants that grow amongst the vineyards. They are devoted beekeepers and make their own honey on the farm. In keeping with the nature of things, they also use wild native yeast strains in the fermentation process when making the wines. The winery named this merlot La Merle Haut Perché, which translates to "the high perched blackbird”, a signature bird at these Pays d’Oc vineyards, where blackbirds build their nests in the surrounding sequoia trees. Enjoy now or in 3 years from now at 16 C.
