Originally started as a cattle farm to breed a herd of blonde cows called "Blondes d'Aquitaine'', Adrien and Fabienne Uijttewaal left their Dutch homeland to pursue their agricultural dream in France. After seeing the beauty of the Bordeaux region and developing a passion for wine, they decided to start planting and farming grapes. After learning to produce wine under a cooperage for nearly a decade, Adrien and Fabienne decided to build their own wine cellar along with restoring the family’s historic 18th-century home on the property. They bottled their own first estate vintage in 1995, giving birth to Chateau Saint Hilaire. The couple is now committed to teaching their daughter Elise. She graduated with a degree in agricultural engineering in 2017, so that she can carry on the family's sustainable winemaking practices well into the future. Drink now or in ten years from now at a temperature of 18 C.
