Profile

Smell

Distinctive aromas of raspberry, cranberry, and Maraschino cherry combine in this elegant Pinot, with hints of fresh rosemary, sage, and cloves. As it opens up in the glass, the oak notes of cedar and toast, along with a distinct earthiness, provide lovely complexity.

Taste

Both elegant and concentrated on the palate, with beautifully ripe tannins and lifted, energetic acidity. Combining the power and plushness of California Pinot Noir with the earthy complexity of French examples, this is a truly distinctive and delicious expression of the grape.

Pairing

Grilled rack of lamb served with roast fingerling potatoes would be a great match for the concentrated flavours of this Pinot Noir, or serve with the classic Pinot pairing of pan-seared duck breast.

Aromas and Flavours

Raspberry

Tangy or sweet, juicy or tart: more sophisticated than a strawberry, but just as lush.

Cherry

Fresh B.C. cherries out of the back of a truck, all eaten before you can get them home!

Cranberry

Sweet and tart, just like the cranberry sauce at your family's Thanksgiving table.

Nutmeg / Cloves

Think of the holidays - a warm and woody spice found in your favourite baked goodies.

Herbs

Your windowsill herb garden gives off a lovely herbal smell every time you walk by.

Description

Paddy Borthwick is a small, family-owned estate located in Gladstone, in the heart of Wairarapa on New Zealand's North Island. While the region is known for a variety of grapes and wine styles, it's their Pinot Noirs that have come to the fore as their flagship reds. The region's warm days and cool nights make it a perfect place to grow Pinot, and growers here have shown that they can produce wines with a distinctive character and style that oftens seems to straddle the Old World and the New.

Paddy established his winery in 1996, with a focus on Pinot Noir for his red wines. 10 hectares of the farm are planted to 8 different clones of the grape, and all plots are harvested separately, allowing for maximum control during blending. Fermentation takes place with wild yeasts in temperature-controlled stainless steel before being aged in primarily neutral French oak barrels. Enjoy this concentrated, expressive example of Pinot Noir at about 16 ℃ over the next five years.
