Smell

Youthful and concentrated on the nose, this Cabernet Franc offers aromas of raspberry, ripe red plum, and bramble. Judiciously-used oak contributes a hint of smoke and cedar, accentuating Cabernet Franc's signature herbaceousness without overpowering the fruit.

Taste

This classically-structured red is full-bodied and ripe, with plenty of well-developed tannins to support further cellaring. There's loads of fruit, with more raspberry and cherry, along with an appealing spiciness though the long, pure finish.

Pairing

Match this fuller-bodied Chinon with the hearty flavours of Ratatouille or roasted root vegetables, or serve with grilled venison.

Description

Ame d'Antans translates to "soul of yesteryear," and one sip of this complex Cabernet Franc from Patrick Lambert is enough to see why he's chosen such an evocative name. The fruit for this wine is sourced from his oldest vines in Cravant-les-Coteaux, in Loire Valley's Chinon subregion. His small, 6 hectare vineyard is farmed organically and certified by Ecocert, and work in the vineyard is entirely manual. Fermentation takes place with wild yeast, and finished wines are aged in his cellar, which is cut directly into the region's famous limestone hillsides. If you're unfamiliar with Cabernet Franc from Chinon, this is a great place to begin. A traditionalist at heart, Patrick Lambert's wines are unvarnished representations of his vineyard's unique microclimate, and capture the charm and beauty of Loire Valley Cabernet Franc. This fuller-bodied Chinon will improve in the cellar over the next ten years, and should be enjoyed at about 16 °C.
