Profile
Smell
A perfect wine for campfire and BBQ season, with sweet and smoky aromatics of paprika, sage and sweet tobacco combined with dark fruit and baking spice on the nose. Harmoniously floral with a dried potpourri perfume.
Taste
Full-bodied and structured with good acid retention. This Zinfandel has a wonderful spearmint and bubblegum flavour that integrates beautifully with freshly baked cherry, red plum, black raspberry and pomegranate flavours. Perfectly long finish with silky tannins and a lingering dark chocolate-covered strawberry note.
Pairing
Pair with Texas-style BBQ beef brisket, applewood bacon cheeseburger, baked eggplant, black bean soup or smoked gouda cheese.

Description
Optima Winery was started by Mike Duffy and his wife Tina in 1984. In 2001, Mike tragically lost Tina to cancer, leaving him to raise their two boys and run the winery. Tina's memory remains in the wine labels she created before passing and are still on the bottles today. Duffy now runs the winery with his new wife Nicol, whom he met while coaching her son's soccer team. She invited him over for a glass of wine after one of the games to get to know him and happened to open a bottle of Optima Chardonnay. Mike laughed as he explained he owned the winery, and the rest is history. Mike and Nicol have since purchased more vineyard sites and combined their families and passion for wine into the heart and soul of Optima Winery. This wine is 100% Zinfandel, sourced from their Dry Creek Valley vineyard. Drink now or in 5 years from now at 18°C.
