Profile

Smell

Deep purple in colour, this intense wine leads with notes of black currant, mixed berry jam, and bramble. As it opens up with air, secondary notes of pepper, tobacco, and vanilla emerge, adding complexity and depth.

Taste

Full-bodied and plush on the palate, with soft, well-integrated tannins and a balanced oak profile. A core of dark red and black fruit lead to a long finish with hints of dried herbs, baking spice, and graphite.

Pairing

This North Coast Cabernet is a great match for herb-roasted pork, grilled lamb, or beef tenderloin served with sautéed cremini mushrooms.

Description

Winery founder Don Sebastiani Senior's thesis subject in university was 13th Century philosopher and theologian St. Thomas Aquinas, so it's no surprise the winery chose him as inspiration for this project. Born of the conviction that good wine, one of life’s simple pleasures, should be accessible to all, Aquinas Cabernet Sauvignon is made from fruit sourced primarily from California's North Coast. The winemaking team draws on vineyards located in Mendocino, Napa Valley, Lake County, and Alexander Valley to create a harmonious final blend. Cooler-climate Mendocino allows for slow, even ripening of grapes and produces wines with distinctive elegance, while warmer vineyards add expressive fruit and structure. If you like big, bold reds with plenty of fruit, this is likely to become a new favourite! Enjoy over the next 5-7 years at a cool 17 C.
