Smell
Restrained aromas of lemon and apple lead the way, but as the wine warms up in the glass, intriguing notes of flint, dried herbs, and a fresh herbaceousness begin to emerge. There's almost a hint of sweet smoke on the finish, as well, adding complexity and interest to the primary orchard-fruit aromas.
Taste
Concentrated and expressive on the palate, but still light and elegant - this is the kind of wine you'll want to savour in order to appreciate the layered complexity. The finish is long and lingering, with a pure, balanced acidity that leave you wanting more.
Pairing
Pair with classic salade niçoise, bouillabaisse, or seafood paella to take advantage of this wine's bright, refreshing acidity.

Description
Though sadly under-represented in the Canadian market, Hungary has a long, proud tradition of making some of the world's most interesting and delicious wines. Known primarily for the decadent sweet wines of Tokaji, which were once the most famous wines in the world, Hungary also makes remarkable dry wines from a host of indigenous grape varieties. They're finally beginning to attract some well-deserved international attention, and we couldn't be happier to share this delicious example with WineCollective members!
Better yet, there's a Canadian connection with the wines of Gilvesy - owner Robert Gilvesy is originally from Ontario, where he grew up on a tobacco farm near Lake Eerie. During a family trip to explore their Hungarian roots, Robert fell in love with his mother country, and eventually returned permanently to start his winery in 2012. His St. George Cuvee is a complex white that honours the region's namesake geological feature. Enjoy at about 12 C over the next three years.
