Tenuta del Pajaru is the sister project of WineCollective favourite Torre Zambra, and helmed by the fourth generation of the De Cerchio family. Federico's grandfather Laurentino discovered the estate on a trip to Puglia to sell his family's own wines, and was captivated by the region, the people and their wines. The winery is located in Manduria, a part of Italy known primarily for their robust, full-bodied red wines, and this Nero di Troia is no exception! The grape's name translates to "black grape of Troy," and Tenta del Pajaru's example comes from organically-farmed vineyards planted on compact, limestone-rich soils that give the wine incredible density and concentration. Grapes are spontaneously fermented before being aged for 6 months in mostly second-use French and Slavonian oak barrels. Enjoy this complex red at about 18 C over the next 5-8 years.
