Deep and brooding, the nose of this Nero di Troia showcases aromas of plum, ripe fig, and field strawberries, along with distinctive notes of cocoa powder, dried herbs, and coffee.

Taste

Full-bodied and velvety-smooth, you'd never guess this wine clocks in at a whopping 15% alcohol! It's held in check admirably by soft tannins and bright, balancing acidity that perfectly complements the juicy red-fruit flavours.

Pairing

Pair this red with full-flavoured aged cheeses, or match with the hearty flavours of braised oxtail or beef and vegetable pie.

Description

Tenuta del Pajaru is the sister project of WineCollective favourite Torre Zambra, and helmed by the fourth generation of the De Cerchio family. Federico's grandfather Laurentino discovered the estate on a trip to Puglia to sell his family's own wines, and was captivated by the region, the people and their wines. The winery is located in Manduria, a part of Italy known primarily for their robust, full-bodied red wines, and this Nero di Troia is no exception! The grape's name translates to "black grape of Troy," and Tenta del Pajaru's example comes from organically-farmed vineyards planted on compact, limestone-rich soils that give the wine incredible density and concentration. Grapes are spontaneously fermented before being aged for 6 months in mostly second-use French and Slavonian oak barrels. Enjoy this complex red at about 18 C over the next 5-8 years.
