Don Francisco Undurraga established Viña Undurraga in 1885 and was a pioneer in Chilean still and sparkling wines. Undurraga was also the first Chilean winery to export to the United States in 1903, delivering one case of Pinot Noir to each of the 45 states. Today, 10 brands exist under the Undurraga name including "U by Undurraga". The grapes are sourced from vineyards in the Central Valley where the soils are loamy and clay. The climate is humid and Mediterranean with moderately wet winters and dry warm summers. The flat land in the valley allows for heat to be well distributed, allowing for healthy maturation of red varieties. The Cab Sauv is fermented in stainless steel tanks at 28 degrees Celsius, prior to seven days in maceration to achieve extraction of tannins, colour and aroma. We recommend drinking prior to 2017 at 17 degrees, decanting is unnecessary.
Clear and clean, medium intense ruby red that is fairly consistent from core to edge.
Red raspberry, cherry and a bit of plum. The nose is bright and fruity with a pinch of spice.
Notes of a typical Cabernet Sauvignon, produced in a youthful and fresh style. The stainless steel fermentation allows for cleaner expression of fruit, not masked by oak. More red berries from the nose, with ripe black cherry. A strong essence of currant leaves is present with a touch of chocolate spice. Zingy acidity elevates the freshness of the fruit, leading to a short, clean finish.
