Profile

Description

DOTT wines are made by the folks over at Chalmers Wine Estate. The Chalmers family has been committed to creating unique wines for over 30 years. Through their nursery, vineyards, and wine brands, they have always encouraged viticultural diversity that supports sustainable vineyard growth and regional Australian wine production. DOTT wines are all based on Italian varietals thanks to the work of the late Dr. Rod Bonfiglioli. Dr. Bonfiglioli was focused on vine material health and diversity. He encouraged Chalmers to look beyond to find grapes that might do better in different parts of Australia than what was currently growing there. Dr. Bonfiglioli connected Chalmers with some influential organizations that helped them bring in Italian varietals. Chalmers are the Australian agents for the Italian nursery Vivai Cooperativi Rauscedo (VCR). They are the largest vine nursery in Italy and also have one of the best research facilities worldwide. Dott wines challenge the concept that native varietals cannot make beautiful expressions in alternate landscapes. Nebbiolo is the hero grape, the king of Piedmont, the varietal that is used to produce such age worthy wines as Barolo and Barbaresco. The DOTT Nebbiolo comes from clone MAT10 that were introduced to Australia in 2001, to the vineyards in Heathcote. It is the preferred clone as it’s a later ripening version and retains a higher acidity which keeps the fruit fresh and bright within the glass.

Pairing

Lamb ragout with chickpeas, stuffed cabbage leaves, and roasted lamb shanks with saffron risotto.

Aromas and Flavours

Smoke

Reminds you of singing songs by the campfire on a beautiful summer evening.

Pomegranate

The scent of pomegranate is subtle, but has a distinct sweet-tart and 'winey' flavour.

Pencil shavings

Sharpening your pencil to a stub using the old-school sharpener at the back of the class.

Floral

You just received a bouquet from a secret admirer and the smell is intoxicating.

Raspberry

Tangy or sweet, juicy or tart: more sophisticated than a strawberry, but just as lush.
