Profile

Description

DOTT wines are made by the folks over at Chalmers Wine Estate. The Chalmers family has been committed to creating unique wines for over 30 years. Through their nursery, vineyards, and wine brands, they have always encouraged viticultural diversity that supports sustainable vineyard growth and regional Australian wine production. DOTT wines are all based on Italian varietals thanks to the work of the late Dr. Rod Bonfiglioli. Dr. Bonfiglioli was focused on vine material health and diversity. He encouraged Chalmers to look beyond to find grapes that might do better in different parts of Australia than what was currently growing there. Dr. Bonfiglioli connected Chalmers with some influential organizations that helped them bring in Italian varietals. Chalmers are the Australian agents for the Italian nursery Vivai Cooperativi Rauscedo (VCR). They are the largest vine nursery in Italy and also have one of the best research facilities worldwide. Dott wines challenge the concept that native varietals cannot make beautiful expressions in alternate landscapes. Only a handful of Pavana vineyards now remain in Italy, mostly in the Valsugana which bridges Trentino and Veneto. Once widely planted when Austria had control of most of this region. Light and perfumed, with hints of a herbal character, it has been compared to Pinot Noir in structure and style.

Pairing

Portobello mushroom burger, wild rice and cranberry salad, and vegetable couscous.

Aromas and Flavours

Raspberry

Tangy or sweet, juicy or tart: more sophisticated than a strawberry, but just as lush.

Jam

Spreading grandma's homemade jam on your morning toast (yes, the bread was homemade too).

Cranberry

Sweet and tart, just like the cranberry sauce at your family's Thanksgiving table.

Chalk

Remember cleaning the erasers by smacking them together, creating little puffs of chalk dust?

Cherry

Fresh B.C. cherries out of the back of a truck, all eaten before you can get them home!
