Profile

Smell

The initial fruit aromas of plum, blackberry and black currant give way to subtler aromas of fennel, pepper and nutmeg as the wine opens up. There’s also some mint and a tiny hint of green bell pepper.

Taste

This Cabernet Sauvignon has an abundance of dark fruit on the palate as well, with a slight touch of mint. Blackberry and black currant are joined with more fresh plum and cherry. Its acidity, tannins and alcohol are nicely balanced to create a result that is true to the wine’s name: elegance.

Pairing

Match with anything from rosemary-crusted rack of lamb to a grilled pork tenderloin, or enjoy on its own in front of a cosy fire!

Aromas and Flavours

Black currant

Sometimes also referred to as 'cassis', this black fruit tasting note is common in red wines.

Blackberry

A little sweet, a little tart, this black fruit is rather quiet but persistent.

Cherry

Fresh B.C. cherries out of the back of a truck, all eaten before you can get them home!

Herbs

Your windowsill herb garden gives off a lovely herbal smell every time you walk by.

Mint

A touch of sweet and cooling herbal flavours, think gum, but without the intense menthol

Description

Vianney Castan wasn’t born in the vineyards, nor did he inherit a winery. Yet, he has winemaking in his blood. His great-grandfather Joseph Castan founded a modest winery in 1907 and went on to produce award-winning wines in the southern French region of Languedoc. Until misfortune hit: in 1956, France was hit by an extreme cold snap that completely wiped out the vineyards – an event the winery never recovered from. Fast forward to 100 years later. Inspired by the stories of his grandfather and father, Vianney Castan and his wife Emilie decided to pick up where Joseph left off. Naming the company after his great-grandfather, Vianney set out to produce great wine from lesser-known appellations in southern France. The grapes for this Cabernet Sauvignon are grown on clay-limestone soils in the heart of the Languedoc. The wine is smooth and balanced, quite easygoing we’d say. Serve at 18 ºC and enjoy between now and 2026.
