Named "Man With The Ax" after the king of diamonds in a deck of cards, this bold, fruit-forward red is a compelling argument for the continued reign of Cabernet Sauvignon as the king of wines! Long considered California's signature red grape variety, Cabernet Sauvignon, a slow-ripening grape, thrives in the state's consistent heat and sunshine.
Fruit for this Cabernet Sauvignon is sourced from select vineyards in the northern part of California's Central Valley, in the region around Lodi and Manteca. The cooling influence of the San Joaquin and Sacramento river deltas help temper the region's heat, and provide enough acidity to balance the richness of the fruit. After each parcel of fruit is fermented separately, a final blend is made, which is then aged for 6 months in oak. The final wine is sure to become a new favourite for lovers of the king of grapes! Enjoy at about 18 C over the next 2-3 years.
Pairing
Don't over-think this one: a grilled t-bone with mushroom sauce would be a great match for this classic cab, but if you want to mix it up, pair with a takeout classic like beef and broccoli.
