Tomé Wines are the brainchild of Robert Tomé, who passion, knowledge and experience in the wine industry, led him to pursue the entrepreneurial dream and launch his own agency representing some of the biggest names in the wine world. And he was good at it. It grew into one of the biggest importing agencies in Canada (he's Canadian by the way) but it wasn't enough. He decided to challenge himself and branch out and launch Tomé Brands, making his own wines in Washington State and Italy. Tomé Wines are small lot wines, their commitment to quality allows the team to focus on every aspect of the winemaking process. Carefully selected varietals that are made to showcase the exceptional quality that Washington State can produce. This Cabernet comes from the Columbia Valley, particularly the Frenchman Hills. The fruit was subjected to whole berry fermentation with manual battonage which took place 2/3 times a day. That is the process of stirring around the lees in the juice that settles down at the bottom of the container that the juice is fermenting in. It helps to create texture and adds additional flavours into the resulting wines. The wine was then gently pressed after fermentation (14 days) and then placed in a mixture of new and neutral French Oak barriques and further left on its lees for 24 months. The resulting wine is electric: full of black cherry and swarming with notes of cassis, freshly cut leather, tobacco and baking spices. Long and complex, the wine is reflective of an old-world style with a nod to the new world.
