Wines that have been curated by Madeline that are available in the Canadian market: Davis Bynum Chardonnay Beautiful aromas of baked apple and pears, pineapple, lemon and white flowers. On the palate the wine opens up with toasty brioche and baking spices, with a lush finish that is balanced with acidity and a rich creaminess. Staete Sauvignon Blanc Pale gold with green highlights. Aromas of grapefruit, lime, and elderflower, with background notes of dry herb and stone. Light-bodied with peach, passionfruit, gooseberry, and citrus flavors, and a dry mineral finish. Very enjoyable when young and fresh; will age gracefully with careful cellaring. Torres Celeste Crianza Cherry red color with garnet highlights. Delicious, voluptuous aroma of very ripe black fruit (blueberries) with fine roasted coffee and dried fruit (dried plum) notes. Dense, fleshy, with sensuous flavor sensations that are impressively persistent. Bila-Haut by Michel Chapoutier Cotes du Roussillon Villages Deep garnet red in color, this blend of Syrah, Grenache and Carignan offers aromas of black cherry. On the palate, the wine is fleshy and well-structured — a nice expression of the terroir in the Roussillon area. Castello di Monsanto Chianti Classico Riserva Estate-grown, hand-harvested grapes are fermented in temperature-controlled stainless steel tanks with approximately 18 days maceration. During fermentation, delestage and pumping-over takes place twice a day. After the malolactic fermentation, the wine is racked into 500-liter French oak barrels and smaller 225-liter barriques where it matures for about one year. Aged further in bottle before release.
