Profile

Description

Lovely spiced, dark fruit on the palate. This is a full-bodied wine with a firm tannin structure. Dark chocolate, black olives, and wet stones. Lively and juicy with a fresh acidity and long lingering finish. Aged 14 months in second-hand French oak barrels. Hints of menthol, bramble, and baking spice with fig jam. Intense flavour profile and long-lasting. The vineyards that produced the fruit for this wine are extremely low production and are in the area of the Páramo de Corcos and Soria. Páramos de Corcos region is the most surprising and at the same time unknown region of the Ribera. Extreme conditions produce low yields but good-quality fruit. The vineyards of Maradillo de Roa, Fuentemolinos, and Castrillo de la Vega are all on sandy loam soils with pebbles, some with elevations around 900 meters. All the grapes were manually harvested late in the season. This winery is especially known for producing high-quality Tempranillos. The local name for Tempranillo is Tinta del Pais.

Pairing

Venison sausages, Sunday roast, and grilled ribeye.

Aromas and Flavours

Black currant

Sometimes also referred to as 'cassis', this black fruit tasting note is common in red wines.

Oak

Olive

Briny quality, slightly bitter and green. Think about that dirty Martini you recently had!

Plum

Sweet, fruity and sensual, similar stone fruit aromas to a peach, but without the 'fuzziness'.

Cinnamon

The scent of freshly baked cinnamon rolls, straight out of the oven - ooey gooey goodness!
