Profile

Description

Bodegas Nodus owes its roots to Adolfo de las Heras, who in 1985, driven by his passion for oenology purchased one of the most valuable estates in Valencia. El Renegado spans over 450 hectares of land that is combined with vineyards and forests. Over 80% of the vines are 40-year-old native Bobal. Don Adolofo was an ecological pioneer and introduced organic practices in his vineyards. His philosophy is sustainability and the preservation of the environment for future generations. He also championed the introduction of Cabernet and Merlot in his vineyards and was the first in his region to produce quality wine. In the late 1990’s his son, Adolfo de las Heras Polo took over the estate and continued his father’s vision of the winery. Adolfo, the second, has grown the winery by modernizing the winery facilities and adding more international varieties to the mix, after careful research and development. Bodegas Nodus was born as a flagship of the company, a homage to the range of wines that are now considered the icons of the estate. The Chaval Bobal is a distinct representation of this Valencian native varietal. Certified vegan and 100% organic. Prominent flavours of plum and black cherry with hints of Madagascar vanilla, baking spices and anise. The tannins are soft and silky and display a firmness on the palate, with a long lean length.

Pairing

Vegetable stew, cheese fondue, sun-dried tomato pasta.

Eating handfuls of berries straight from the bush, your fingers stained purple for days to come.
