Description
The history of this family Domaine goes back to 1752, the ancestors of the Perez family were vine growers in Baltuille, making wine from some of the plots that today form part of the winery. What defines their work is their dedication to staying true to their roots, the tradition, experience, and respect for the terroir which links all nine generations of family together. The winery is located at the foot of the western slope of Castro de la Ventosa, which is a historical Roman site that gives its name to the project. This winery is one of the only ones in Bierzo that own all their own vineyards, and the average age of the vines is all over 85 years in age. When you drink Castro Ventosa wines, you are drinking history, the results of knowledge passed down from generation to generation. This wine is a mix of grapes that are mostly from the Valtuille de Abajo vineyards, a mixture of 352 mini plots, located in 17 different places. The grapes were harvested manually (traditional in the region), and placed in stainless steel tanks. Only native yeasts are used in the fermentation and the resulting wine, once fermentation has finished, spends 3 months in 5,000-liter wood fudres until bottled.
