Description

Co-operatives started so that grape producers could work together to produce wines as they individually could not do so on their own. It enabled people to make, market, and sell their wines independently. Cellier des Demoiselles was founded in 1914 in Saint Laurent de la Cabrerisse, near Carcassonne, in Aude, and was one of the first winegrower's cooperatives in France. This cooperative has produced over 100 vintages since its inception and participated fully in the history of Languedoc viticulture. The name of the co-operative is a tribute to the women of the village who during the First World War, took over from the men who had gone to the front. By replacing the men who left, the women worked hard to preserve the vineyards and the work that was left in the winery. They also put their vision of winemaking into cuvees that express all the beauty and typicity of this southern French terroir. The co-operative has over 160 members who are all dedicated to promoting local associations and terroir. They are of course the many family generations who continue in their forefathers’ footsteps and continue their work in this historic region.This wine is 100% Carignan and is over 60 years of age. Carignan is well-suited to the Mediterranean climate in the Pays d’Oc appellation and thrives on the dry, rocky slopes. This wine is full-bodied, robust, and very generous. Earthy and rich, with notes of dry red fruit, and has a crisp acidity.
