Description
This is the second wine WineCollective is offering from Château Pech-Céleyran this month. Located in an ideal Languedoc location, halfway between Beziers and Narbonne, Château Pech-Céleyran continues to celebrate 5 generations of Saint-Exupéry family history. Many historic figures can be found on the family tree, including ancestor Antoine, who authored the book ‘The Little Prince’. Two notable winds from the northwest and the south bathe the vineyards in the scrub and herb aromas that infiltrate the air. The 96 hectares of vineyard are planted on a clay-limestone hill, referred to as the "Le Pech", where their Pays d’Oc wines use Cabernet Sauvignon, Merlot, Malbec, Pinot Noir, Syrah, Chardonnay, Viognier, Muscat, and Sauvignon Blanc. This specific Ombline Rouge wine is a blend of Merlot, Cabernet Sauvignon, and Malbec.
Château Pech-Céleyran's Ombline Rouge is a perfect example of why we at WineCollective love red blends from the South of France! This wine should be served at 18 C, and can be enjoyed now, or cellared until 2025.
Pairing
Anything from the grill would work well - from a flatbread with peppers and cremini mushrooms, to ribs in a sweet, peppery barbecue sauce.
Aromas and Flavours
Plum
Sweet, fruity and sensual, similar stone fruit aromas to a peach, but without the 'fuzziness'.
Raspberry
Tangy or sweet, juicy or tart: more sophisticated than a strawberry, but just as lush.
Strawberry
A sweet, almost caramel-like aroma reminiscent of your favourite juicy, red berry.
Pepper
A whiff of a freshly used pepper grinder - spicy and fresh, without the itchy nose.
Vanilla
A sweet spice aroma that indicates oak-ageing - think vanilla bean frappuccino!
