Viognier is one of southern France's star white grapes. It's the only permitted grape variety in prestigious Condrieu, but is grown throughout the region. When it's fermented at cool temperatures and aged in stainless steel like this delicious example from Domaine de Castelnau, it expresses all of its signature aromatics while preserving the grape's natural acidity.
