Description

Domaine Gayda was founded in 1749 in Bruigairolles, near Carcassonne. Located in the foothills of the great Pyrenees, and surrounded by nothing but organic vineyards. Its history is as a coaching inn for travelers that grew over the decades into a luxury accommodation. In 2004 the property was purchased by Tim Ford and Anthony Record. With the partnership with esteemed winemaker, Vincent Chansault, the winery developed a modern approach. Their vineyards are spread between the Languedoc and Roussillon regions and they grow the traditional Languedoc varieties. Their vineyards extend over a wide range of terroirs from sandstone, limestone, granite, and schist. Domaine Gayda represents the traditions of the region while embracing modern technology to create wines of distinction. With a focus on minimal intervention winemaking, Domaine Gayda strives to make wines as naturally as possible. 20% of this wine was fermented in one-year oak barrels and 80% was fermented and aged in stainless steel tanks. The wine that rested in barrels was left on its lees for Bâtonnage for six months before being blended. This imparts a creaminess to the wines which lends notes of cream, butter, and brioche, and gives the wines a richer texture on the mouthfeel. The existing wine produced has succulent notes of citrus, honeysuckle, and vanilla with a rounded toasted hazelnut finish. Apricots and peaches coexist with the natural mineral notes that express the terroir that the grapes were grown in.

Pairing

Serve this wine with pesto pasta, vegetable tagine, halibut in a lemon butter cream sauce, and grilled pork chops.
