Profile

Description

DOTT wines are made by the folks over at Chalmers Wine Estate. The Chalmers family has been committed to creating unique wines for over 30 years. Through their nursery, vineyards, and wine brands, they have always encouraged viticultural diversity that supports sustainable vineyard growth and regional Australian wine production. DOTT wines are all based on Italian varietals thanks to the work of the late Dr. Rod Bonfiglioli. Dr. Bonfiglioli was focused on vine material health and diversity. He encouraged Chalmers to look beyond to find grapes that might do better in different parts of Australia than what was currently growing there. Dr. Bonfiglioli connected Chalmers with some influential organizations that helped them bring in Italian varietals. Chalmers are the Australian agents for the Italian nursery Vivai Cooperativi Rauscedo (VCR). They are the largest vine nursery in Italy and also have one of the best research facilities worldwide. Dott wines challenge the concept that native varietals cannot make beautiful expressions in alternate landscapes. Ribolla Gialla, or Ribuele, as it is known in Italy, hails from Friuli. It’s the basis of now iconic cult wines coming from the area along the Slovenian border. It’s traditional method of vinification sees time in amphorae and skin contact. It has adapted well to the cooler climate of Heathcote and ripens slowly within the long seasons.

Pairing

Fried calamari, lemon caper veal piccata, and mussels in white wine dijon sauce.

Aromas and Flavours

Apple

From Granny Smith to Red Delicious, apple makes for a delightfully crisp aroma.

Lemon-lime

Common in cool climate white wines, this aroma can range from fresh citrus to lemon zest.

Floral

You just received a bouquet from a secret admirer and the smell is intoxicating.
