*Famille Fabre Domaine De Luc Cabernet Sauvignon*

Description

Stainless steel fermentation to create a fresh rendition of Cabernet from the sub-region of Corbieres, in the Languedoc. The vines are roughly 30 years old which is sort of natural to this part of France. The climate of this area is hot! The vines are grown in clay-limestone and the vineyards are terraced. The limestone helps keep the roots cool, amidst all that heat. Harvest is done at night to preserve the freshness of the grapes. In the winery, the methods are kept simple: destemming to limit the tannins, long maceration for 18 days with constant lees stirring to create more texture and fruit complexity. This wine has a fantastic aroma! Its all ripe quintessential Cabernet fruit-blackcurrants, pepper, and cassis with chocolate. Silky tannins are intermixed with notes of freshly picked violets and hints of spice. Silky smooth on the palate with a long generous length. The Famille Fabre is a wine-making family with a rich history in the Languedoc. they run a total of five different wineries that showcase different styles and types of wine that are traditional to the area with some new modern varietals. Château De Luc is nestled in the rocky terraces of the Orbieu river and the windy foothills of Mount Alaric. This landscape yields concentrated and well-balanced versions from their vineyards. Farmed with the strictest of organic systems that reflect the purity of the fruit. The underground cellars are an amazing feat to behold as they originate from the 14th century.
