Description

This wine is 100% Cabernet and was fermented in separate parcels in fermenters with daily pumps over the skins to extract maximum flavour and colour. The wine was then blended and placed in part tank and oak barrels for maturation and then blended. Bright garnet in colour, this Cabernet is fragrant with notes of plums, cassis, and red fruit. Hints of menthol and eucalyptus with supporting notes of spice. Smooth and rounded on the palate with a real savoury character. Ripe red fruit is balanced by supple tannin management and the wine shows secondary notes that are showcased on the nose. Cabernet has a long history in Australia, first arriving in 1812. James Busby, the famous Australian wine pioneer brought over some rootstocks from Australia. The persistence of wine growers has proved to be successful as Cabernet is almost just as widely planted as Shiraz (It is the third most planted variety after Shiraz and Chardonnay). Fun fact: Australia boasts that they have the oldest productive Cabernet Sauvignon vines in the world. They are located in the Barossa Valley, the northern part, and were planted at Penfolds Kalimna Block 42 back in 1886. These vines play a very important role in the story of Penfold as it is today.

Pairing

Roast beef, mashed potatoes with mushrooms and caramelized shallots, or aged Pecorino Cheese.

Black currant

Sometimes also referred to as 'cassis', this black fruit tasting note is common in red wines.

A whiff of a freshly used pepper grinder - spicy and fresh, without the itchy nose.

Bell pepper

Fresh green, herbaceous notes in wine - a little is desired, a lot, not so much.

Blackberry

A little sweet, a little tart, this black fruit is rather quiet but persistent.
