Description

Grifoll Declara is a wine company that has over five generations of winemaking history behind it. Beginning as wine growers in 1736, their forefathers worked the same lands as they do now. The Grifoll family bought their first vineyards in 1880 and began working with the local co-operative in El Molar. It was in 1989 that famed Bierzo producer Alvaro Palacios began to purchase grapes from the family and in the early 2000s, they finally began producing their estate bottled wines which are only produced in the village of El Molar.  To distinguish themselves from the Montsant D.O., Grifoll Declara founded in 2016 the Mountain Wine Appellation which differentiates their El Molar wines from the others. The family has built a second winery that is still in the same municipality. Roger Grifoll, is the winemaker and manages the family estate. While he was in secondary school, he spent his afternoons working with Alvaro Palacios and later on worked for Aforim selling corks and creating relationships across Spain.  The Grenache Blanc was grown at an altitude of 235-305 meters above sea level. The soil is a mixture of sand and clay on terraces. The grapes were macerated for 3 hours and then fermented in 600-litre stainless steel tanks with Indigenous yeasts. The wine was then aged for 3 years in barrels on its fine lees. The resulting wine has a creamy texture and is beautifully layered.
