If you’re new to Cava, we apologize in advance: this bottle is going to spoil you! Northern Spain’s answer to Champagne, Cava is traditional-method sparkling wine (ie. refermented in each bottle, rather than in pressurized tanks like Prosecco) made with native Spanish grape varieties. Raventós i Blanc are one of the true masters of the style, tracing their history back to 1497 – the current owner, Pepe Raventós, represents the 21st generation of the founding family! Their vintage-dated De Nit rosé is a benchmark Cava. It’s made from the traditional Cava grape varieties of Xarel-lo, Parellada, and Macabeo, with just a touch of Monastrell for colour. Aged for 18 months on the lees, the finished wine has all the elegance and complexity of rosé Champagne, while retaining a distinctly Spanish flair. Enjoy this delicious example of rosé Cava at a well-chilled 6℃ over the next 5 years.
Pairing
There isn't much we could think of that wouldn't pair well with this wine, but try the classic (and delicious) interplay of sparkling wine with salty fried foods, and match with calamari, fish and chips or fried chicken.
