Northern Spain’s answer to Champagne, Cava is traditional-method sparkling wine (ie. refermented in each bottle, rather than in pressurized tanks like Prosecco) made with native Spanish grape varieties. Raventós i Blanc are one of the true masters of the style, tracing their history back to 1497 – the current owner, Pepe Raventós, represents the 21st generation of the founding family! Their vintage-dated De Nit rosé is a benchmark Cava. It’s made from the traditional Cava grape varieties of Xarel-lo, Parellada, and Macabeo, with just a touch of Monastrell for colour. Aged for 18 months on the lees, the finished wine has all the elegance and complexity of rosé Champagne, while retaining a distinctly Spanish flair. Enjoy this delicious example of rosé Cava at a well-chilled 6℃ over the next 5 years.
