Description

Chablis is arguably one of the world's greatest expressions of Chardonnay, so it's always exciting to come across a small producer like Domaine Ventoura whose wines we're able to share with WineCollective members. Auguste Ventoura started the estate in 1953 when he planted a small amount of Chardonnay on his farm. His son Claude expanded plantings to the winery's current size of 11 hectares, and began bottling wines under their family name rather than selling them to the local cooperative. Now, third-generation Thomas has taken the reigns, bringing new technical expertise and attention to detail to the winery's operations. The focus, however, remains in the vineyards, and this 1er Cru from the renowned Fourchaume vineyard is no exception. The region's famous clay-limestone soils give the fruit produced from these 33-year old vines incredibly complex minerality, and while some producers choose to expose their 1er Cru fruit to oak, the Ventoura family has always made their Fourchaume in 100% stainless steel. The resulting clarity and freshness in the wine allows for the full expression of this fantastic vineyard. Enjoy at about 12 C over the next 3-5 years.

Pairing

Match with a creamy truffle risotto, or use wine's minerality and bright acidity to offset the richness of butter-poached lobster.
